Avocado & Chicken Burritos

Serves: 4
Preparation Time: 8 minutes
Cook Time: 10 minutes

    Ingredients

  • 4 small chicken breasts
  • 1 tablespoon olive oil
  • 4 tortillas
  • 1 cup reduced fat sour cream or natural yogurt
  • 1 220g jar of salsa (or check our salsa recipe to make your own)
  • 8 large lettuce leaves
  • 1 large red onion, cut into wedges
  • 1 red capsicum, seeds removed and finely sliced
  • 2 avocados sliced
  • Low fat grated cheese (if desired)

    Method

  1. Heat olive oil in a large frying pan and cook chicken for 5 minutes each side.
  2. Remove chicken and slice.
  3. Warm tortillas according to packet instructions.
  4. Smooth a quarter of sour cream and salsa over each tortilla and top with lettuce, chicken, onion, capsicum and avocado.
  5. Roll and serve
