Grilled Pork Cutlet with Caprese Salad and Apple Balsamic
Serves: 2
Preparation Time: 15-20 minutes
- 2 x 150g lean Pork cutlets
- Black pepper
- 2 tomatoes, sliced
- 1 x buffalo mozzarella or bocconcini
- Small bunch baby basil leaves
Ingredients
- 4 tablespoons balsamic vinegar
- 4 tbsp apple juice concentrate
Dressing
- Season the pork with pepper.
- Cook in a little olive oil over a medium heat for 4 minutes each side or until cooked through.
- Arrange sliced tomato, cheese and basil onto serving plates then place the pork cutlet alongside.
- Combine the dressing ingredients and drizzle over the salad.
- Serve and enjoy.
