Grilled Pork Cutlet with Caprese Salad and Apple Balsamic

Serves: 2
Preparation Time: 15-20 minutes

    Ingredients

  • 2 x 150g lean Pork cutlets
  • Black pepper
  • 2 tomatoes, sliced
  • 1 x buffalo mozzarella or bocconcini
  • Small bunch baby basil leaves

    Dressing

  • 4 tablespoons balsamic vinegar
  • 4 tbsp apple juice concentrate

    Method

  1. Season the pork with pepper.
  2. Cook in a little olive oil over a medium heat for 4 minutes each side or until cooked through.
  3. Arrange sliced tomato, cheese and basil onto serving plates then place the pork cutlet alongside.
  4. Combine the dressing ingredients and drizzle over the salad.
  5. Serve and enjoy.
