Smoked Salmon and Avocado Salad Baguette

Serves: 2
Preparation Time: 10 minutes

    Ingredients

  • 1 x 40cm Baguette
  • 1/3 cup olive paste
  • 2 handfuls (approx 20g) baby English spinach leaves
  • 1 avocado, sliced
  • 3/4 cup roasted tomatoes
  • 250g sliced smoked salmon
  • Basil leaves, to garnish

    Method

  1. Slice the Baguette lengthways down the centre.
  2. Hollow out the baguette using your fingers.
  3. Fill Baguette, spread olive paste over the bread, layer the spinach leaves, avocado, tomatoes, smoked salmon and garnish with basil leaves.
  4. Cut the baguette in half, tie each end with a paper napkin and serve.
