Steak with Walnut and Rocket Pesto
Serves: 4
Preparation Time: Approx. 30 minutes
- 100g raw walnuts
- 100g rocket leaves
- 2 cloves crushed garlic
- 1 long red chilli, seeded and chopped
- salt and cracked black pepper
- 1⁄4 cup olive oil
- 1⁄4 cup warm water
- 4 X 180g sirloin steaks, trimmed of fat
- 4 cups steamed mixed vegetables
Ingredients
- Place the walnuts, rocket, garlic, chilli, salt and pepper in the bowl of a food processor or blender.
- Process for a few seconds until combined, then slowly pour in the olive oil in a thin stream, followed by the water. Set aside.
- Heat a stovetop grill on high.
- Spray the steaks with a little oil spray and place on the grill.
- Cook for 3-4 minutes on each side for medium well done or cook to your liking.
- Serve a dollop of pesto on top of each steak and serve with steamed vegetables.
