Thai Pork Salad with Oven Roasted Cashews and Lime Dressing
Serves: 2
Preparation Time: 15 minutes
- 300 g trimmed Pork leg steaks
- Black pepper to taste
- 2 Lebanese cucumbers, sliced
- 1 red capsicum, sliced
- 3 spring onion (shallots), sliced
- 1 tomato, cut into slices
- 1 small handful coriander leaves chopped or shiso leaves shredded
- 1 handful mint leaves, chopped
- 2 tablespoons, chopped roasted cashew nuts
Ingredients
- Juice from 4 limes
- 2-heaped teaspoons honey
- 1/2 chopped red chilli (optional)
- 1 tablespoons fish sauce
Dressing
- Season the Pork steaks with black pepper.
- Cook in a medium frying pan for 2-3 minutes each side until done to your liking.
- Rest for 5 minutes, then slice thinly.
- Combine all the salad ingredients along with the sliced Pork. Mix the lime juice, honey, chilli and fish sauce together then toss through with the salad.
